Real Foods Holiday Sleigh Ride Romp

Consider booking time for your group on a public ride or renting a carriage from a private vendor. Check wedding resources for carriages in your area. Entertain guests with an old-fashioned flair and home-baked goods. Keep everyone toasty with fleece blankets and hot drinks. Ring in the holiday spirit by attaching sleigh bells to your carriage, and “hark the herald” with a group sing-along!

Invitation In Victorian times, visitors to a private home would present a calling card to announce their arrival and request a visit. Beckon guests to this Sleigh Ride Romp in the same manner, by sending a small decorative card simply stating, “Susan Has Requested The Pleasure of Your Company for a Holiday Sleigh Ride Romp. Please R.S.V.P.”

Décor With a snowy landscape or holiday street as your backdrop, little décor is needed. Accent your affair by packing baked goods in holiday-themed tins wrapped with big bows. Give guests fleece blankets, or scarves and mittens as party favors to ensure their comfort. Bring along a basket of hand-bells to add a little jingle to your ride or accompany holiday songs.

HOLIDAY SPICED CHOCOLATE LAYER CAKE

CAKE:
1 box (18.25 oz.) dark chocolate cake mix
1 cup Hellmann's® or Best Foods® Real Mayonnaise
3/4 cup water
3 eggs
1/4 cup orange liqueur
1 tsp. ground cinnamon
1 cup orange marmalade

SWEETENED WHIPPED CREAM:
1 pint heavy or whipping cream
1 Tbsp. sugar
1 Tbsp. orange liqueur
1/4 tsp. ground cinnamon

1. Preheat oven to 350°. Grease and lightly flour two 8-inch square cake pans; set aside.

2. In large bowl, with electric mixer on low speed, beat cake mix, Hellmann's® or Best Foods® Real Mayonnaise, water, eggs, orange liqueur and cinnamon 30 seconds. Beat on medium speed, scraping sides occasionally, 2 minutes. Pour batter into prepared pans.

3. Bake 25 minutes or until toothpick inserted in centers comes out clean. On wire rack, cool 10 minutes; remove from pans and cool completely.

4. For Sweetened Whipped Cream, in mixing bowl, with electric mixer, beat all ingredients until cream forms stiff peaks.

5. Evenly cut each cake into 8 rectangles, then cut each rectangle in half horizontally. Spread orange marmalade onto 8 halves, then top with remaining half. Evenly spread Sweetened Whipped Cream.

WALNUT-DATE LOAF

2-1/2 cups all-purpose flour
3/4 cup sugar
2-1/2 tsp. baking powder
1/4 tsp. salt
1 cup chopped walnuts
1 cup chopped dates
1/2 cup Hellmann’s® or Best Foods® Canola Cholesterol Free Mayonnaise
3/4 cup water
2 eggs
1-1/2 tsp. vanilla extract

1. Preheat oven to 350°. Grease and flour 9 x 5-inch loaf pan; set aside.

2. In medium bowl, combine flour, sugar, baking powder and salt. Stir in walnuts and dates; set aside.

3. In large bowl, with wire whisk, combine Hellmann’s® or Best Foods® Canola Cholesterol Free Mayonnaise, water, eggs and vanilla until smooth. Gradually add flour mixture to mayonnaise mixture. Evenly spoon batter into prepared pan. Bake 1 hour or until toothpick inserted in center comes out clean. On wire rack, cool 15 minutes; remove from pan and cool completely.

AMAZIN' RAISIN CAKE

2 cups sugar
2 tsp. baking soda
1-1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/4 tsp. ground cloves
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1/3 cup milk
2 eggs
3 cups peeled chopped Granny Smith apples
1 cup raisins
1 cup chopped walnuts or pecans
Cream Cheese Frosting

1. Preheat oven to 350°. Grease and lightly flour 2 (9-inch) round baking pans; set aside.

2. In large bowl, combine flour, sugar, baking soda, cinnamon, nutmeg, salt and cloves. Add Hellmann's® or Best Foods® Real Mayonnaise, milk and eggs. With electric mixer, beat at low speed 2 minutes, scraping bowl frequently. (Batter will be thick.) With spoon, stir in apples, raisins and walnuts. Evenly spoon into prepared pans.

3. Bake 40 minutes or until toothpick inserted in centers comes out clean. On wire rack, cool 10 minutes. Remove from pans and cool completely. Frost with cream cheese frosting.
