Thanksgiving Leftovers Recipe: Turkey & Cranberry Quesadilla

Delicious and easy, this Turkey & Cranberry Leftovers Quesadilla will make your day after Thanksgiving meal that much easier.

We have all been there. We hosted Thanksgiving the day before, and now we are off work Friday sitting around with our pants unbuttoned because we ate so much the day before. There are pies littering the counter, pumpkin beer sitting in the cooler, and TONS of leftovers in the fridge. You don’t want it to go to waste, but you also have no idea what to do with it! Eating the same thing as yesterday sounds boring…so what to do? You make a quesadilla, that’s what you do!



When I was brainstorming about how to use all the delicious leftovers from Thanksgiving, this idea popped into my head. I’ll be honest, I wasn’t sure. Would it work? The answer is yes. These flavors are already a favorite. We eat them together every year and they bring the feeling of family, celebration, and thanks. They go just as well in quesadilla form. A little cheese can only help the situation!

  • 4 whole wheat wraps
    2 cups turkey breast
  • 1/2 cup cranberry sauce
  • 2 cup shredded cheese (whatever is your favorite!)
  • 1/4 cup fresh sage, chopped




Spray a large skillet with olive oil and heat over medium heat

Place the first wrap in the bottom of the skillet and top with 1/4 cup cheese, 1/2 cup turkey, 1/4 cup cranberry sauce, 1/8 cup sage, another 1/4 cup cheese, and the second wrap. Grill for about 5 minutes on each side, or until melty and delicious.

Take off of heat and cut into fourths to serve. Repeat with other ingredients to make second quesadilla.

Serves: 2 - 4
