Kid-Friendly Brunch Recipe: Sweet Potato Bacon Dippers

My toddler loves helping me cook and bake things in the kitchen and I'm often surprised by how much she can do and how easily satisfied she is with doing just a few of the simple tasks when she feels like she is contributing. She was excited to learn that we were making special pancakes and was especially excited about making these for her dad. 

I measured out all the ingredients and she poured them in the bowl and mixed it all together. She watched, fascinated, as I poured the batter, laid the bacon on top of pancake batter and covered it with more batter. The batter is sturdy but not too thick, so they were easy to handle and flip.



The shape of these dippers make it fun to eat and the saltiness of the bacon with the savory pancake and sweet syrup make it an amazing combination. Most importantly, my husband loved these because the bacon adds extra protein and it's so convenient to eat - no utensils necessary - and we finished them all off!

  • 1 cup of flour
  • 2 teaspoon of baking powder
  • 2 tablespoon of brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup milk
  • 2 teaspoon melted butter
  • 1 egg
  • 2 sweet potatoes, cooked and pureed
  • 6 strips of bacon
  • Maple syrup

Cook the bacon (I like to bake mine in the oven: line them on parchment paper or foil and put them in a 400 degree oven for 15 minutes).

Combine all other ingredients and mix until smooth.



Using a spoon (or a tipped bottle), pour batter into heated pan to make an oblong shape in a size a little bigger than your bacon.

Place bacon on the batter and then cover it up with more batter.



Cook one side for a few minutes and then flip over.

Serve with maple syrup. Dip, and enjoy!
