Skinny Turkey Reuben

There's something about a grilled sandwich that completely satisfies a hungry belly. 

While it might seem easiest to dash out to a local deli to get your lunch fix, consider making a delicious sandwich on your own.

Most times, a sandwich from the store will have a heck of a lot more mayo, dressing, cheese or other topping on there than you actually need. Making your own sandwich, particularly one as delicious as this Reuben, you'll be able to control the ingredients you use, and thus, the calorie count, without sacrificing on taste.

  • Turkey Reuben Sandwich:
  • 2 slices marbled rye bread
  • 3 ounces (about 3 slices) low-sodium deli turkey breast
  • 1 slice reduced-fat Swiss cheese
  • 3 tablespoons sauerkraut
  • 2 tablespoons homemade Russian dressing (see recipe below)
  • Spray butter

Makes 4 servings

  • Homemade Light Russian Dressing:
  • 1/4 cup light mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • Dash of paprika

Combine all ingredients to make Russian dressing; set aside.

Heat a large skillet over medium heat.

Spread one side of both pieces of bread with Russian dressing. Layer one slice of bread with turkey slices, Swiss cheese, and sauerkraut. Close sandwich.

Spray the outside of slice of bread with spray butter so bread is thoroughly covered. Place face down in skillet; spray other side with spray butter.

Cook for 4-5 minutes, flip, and continue cooking until desired grilling is achieved.

Makes: 1 (including 1 serving of Russian dressing)
