Salted Caramel Apple Popcorn Bars

Before fall fades into winter and the holiday season, I'm soaking up some my favorite flavors of autumn; apples and caramel. This sweet treat is a creative spin on caramel apples, but it's not just perfect for fall – these bars can be enjoyed well into the Christmas season, and make for delicious edible gifts for family and coworkers. 


At one of my past jobs, one of my favorite parts of the holiday season was the tins of popcorn that would be sent in. Every flavor imaginable was in the lunch room at all times. Heaven on earth. My favorite has always been caramel, and this year I took it up a notch.

 

 

The Popcorn Factory has an amazing sampler that I cannot stay away from, the Caramel Lovers Tin. Um…wow. Delicious flavors like Drizzled Caramel, S’mores, and my favorite, Caramel Apple. I knew right away that the Caramel Apple Popcorn would make the perfect holiday treat. I was right.

There can never be enough caramel, and these bars prove it! Treat your coworkers or family to these fancy (and easy) treats this holiday! Yum!

 

 

Ingredients
  • 2 cups Caramel Apple Popcorn
  • 2 cups Caramel Popcorn
  • 4 cups vanilla chex cereal
  • 1 cup butterscotch baking chips
  • 6 cups mini marshmallows, divided
  • 1 jar smuckers salted caramel sauce (or your favorite brand)
  • 12 ounces butter, divided
Directions

In a large microwave safe bowl, melt 3 cups marshmallows with 6 ounces butter. I microwaved for 1 minute, stirred, and then again for 20 more seconds. Stir completely.

Mix in 1 cup caramel popcorn, 1 cup caramel apple popcorn, and 2 cups vanilla chex with the marshmallow mixture. Stir until well combined.

Pour mixture into the bottom of a sprayed or greased 9x13 baking dish. (Tip: spray your hands with nonstick spray in order to press the mixture down firmly into the pan) You want a tight mixture with as little holes as possible.

Pour jar of caramel over top of the popcorn mixture. (heat up in the microwave according to package instructions)

Sprinkle half of butterscotch chips over the caramel.

Repeat with next batch of marshmallows and butter. Stir in remaining popcorn and cereal and repeat. Press mixture over caramel. Sprinkle with remaining butterscotch chips.

Refrigerate for at least 30 minutes to allow bars to set before cutting and serving. Enjoy!

Makes: 8-10 Bars
