Raspberry French Toast Casserole

Brunch continues to rank as my favorite meal, mostly because of the delicious food. If you're planning on hosting a big brunch this weekend, or just want to make an extra special treat for your family, then this French toast casserole is a must-have for your menu.

Not only is this casserole ridiculously simple to make, but it's also delicious that no one will believe it takes less than an hour! Once browned, the bread cubes create a perfectly crunchy crust and once topped with berries and a dusting of powdered sugar, I guarantee there won’t be any leftovers.

  • 5 cups bread cubes
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup white sugar, divided
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon margarine, softened
  • 2 teaspoons ground cinnamon
  • 1 container of raspberries
  • Powdered sugar

Preheat oven to 350 degrees F.

Lightly butter an 8x8 inch baking pan and line bottom of pan with bread cubes.

In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. Pour egg mixture over bread.

Dot bread mixture with margarine and let stand for 10 minutes.

Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top.

Bake in oven about 45 to 50 minutes, until top is golden. Dust with powdered sugar and a few raspberries.
