Pumpkin Parfaits

A modern and elegant "twist" on the traditional pumpkin pie isn't as difficult to come by as you might think. How about making some of our Pumpkin Cream Parfaits? 

We used mini parfait glasses and tied a small spoon to each glass with a brown satin ribbon to give these holiday desserts a little something extra. Guests loved the display as well as the ease at which they were able to enjoy the creamy dessert.

  • 3 ounce package of vanilla pudding mix
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1 1/2 cup milk
  • 1 cup canned pumpkin
  • 1 Heath Bar, crushed
  • 2 cups of whipped cream or cool whip

Combine the dry vanilla pudding mix with the sugar, cinnamon, ginger and cloves in a medium saucepan. Add the milk and bring the mixture to a boil. Once boiling, remove your pan from the heat and add in the pumpkin. Stir well.

Cover the pumpkin mixture with a sheet of wax paper and let cool slightly. 

Once cooled, spoon the pumpkin mixture into parfait glasses, alternating with layers of whipped cream. Refrigerate until serving time.

When ready to serve, top with crushed health bar pieces and serve. You may also want to top with a bit of chopped or shaved chocolate - to each his own!
