Mini BLT Sliders: Updated Twist on the Classic Summer Sandwich

Sometimes, the old standbys are the best. Just because we live in a Pinterest world where every recipe has to be new and exciting doesn't mean we can't still love the old classics.

As far as good old recipes go, I love BLTs, especially this recipe. These Mini BLT Sliders are the perfect poolside snack or meal this summer. Easy, delicious, and quick? Check, check, and check!

There's just something comforting about ripe tomatoes, fresh lettuce, creamy mayo (and I don't even like mayo!) and crispy bacon. Its really a little piece of heaven. These Mini BLT Sliders are the perfect size to enjoy as a main meal, or to serve to a big group for a tasty bite-sized app. They hit the spot, but you don't have to feel guilty about the bacon and mayo. They're so small, the calories barely count -- right?

Since ripe tamoatoes are so summer, these make an adorable appetizer for  your next pool party, a fun addition to a summer BBQ, or can be featured as a main course for a summer picnic. Everyone loves BLTs, and you can whip them up in minutes. You'll be the hero of the party! These would be perfect for a pool party, especially while sipping on a Frozen Lemon Sparkler.

Even though we love beautiful and elaborate recipes, sometimes old-school comfort food just hits the spot. I hope these cute Mini BLT Sliders make your summer parties a bit more fun and tasty. And don't feel bad about that mayo. There's barely any on them anyway!

  • 8 slices crispy bacon, broken in half
  • 16 small pieces of fresh lettuce
  • 8 cherry or glory tomatoes, sliced in half
  • 12 slices sourdough bread, cut into fourths (squares)
  • Mayonnaise (real)
  • 16 large toothpicks

To assemble the sliders, put mayo on one side of one piece of bread, putting the dry side down. This will be the bottom of your slider. Top with lettuce, tomato, bacon, and then a piece of bread with mayo on both sides.

Complete another layer of the slider, lettuce, tomato, and bacon. Top with the third slice of bread, mayo on one side, mayo side down.

Repeat with the 15 other sliders.

Makes: 16 sliders
