Frozen Blackberry Thyme Margarita

Fresh herbs have come to be the secret weapon of mixologists everywhere, adding an earthy touch of sophistication to refreshing fruit based cocktails for a taste that is instantly more complex.

This blackberry-thyme margarita is refreshing both in taste and in texture, and offers an unique flavor pairing for those who’ve grown tired of the typical sweet and sour cocktail.

While blackberries taste best fresh picked from the bush, come fall we wouldn’t blame you if your berries came fresh picked from the icebox!

For moms, dads and other caregivers out there, get back into the swing of the school year with one of these frozen fruity concoctions. They're worth the extra effort to prepare and will make the chaos of back-to-school craziness melt away!

  • 1/2 cup Driscoll's blackberries
  • 3 or 4 small sprigs thyme, plus more for garnish
  • 3 ounces tequila
  • 1/4 cup simple syrup
  • 1 tablespoon orange liqueur, such as Cointreau
  • Juice of 1 lime
  • 1/4 cup sparkling water
  • 1 cup crushed ice

Place the blackberries in a food processor along with the thyme sprigs; pulse for 30 seconds. 

Pour the blackberry puree over a fine-mesh sieve, using a spoon to squeeze as much juice through as possible. Reserve the juice and set to the side. Then, scoop out the puree - you'll add this to the blender with your other ingredients.

Next, combine the puree, tequila, simple syrup, Cointreau, lime juice, and sparkling water in your blender. Blend the mixture until smooth and well combined. 

Pour your frozen cocktail mix into margarita glasses and garnish with sprigs of fresh thyme and blackberries.
