Champagne Cocktail with Grapefruit and Fennel

This fizzy cocktail is so effervescent and delicious, it makes you feel festive with just one sip. I adapted this cocktail after one of my favorites, the French 75, which is made up of gin, lemon juice, simple syrup and champagne. 

Instead of lemon juice, I used grapefruit juice and I made a fennel simple syrup to kick it up a notch. I love a good citrus and fennel salad – the sweetness and bite is such a great combination – and I thought it would translate well into a cocktail. These are a little too easy to knock back, so watch out! If you like your cocktail a little less sweet, cut the simple syrup in half and add a little more grapefruit juice.



  • 1 oz. Grapefruit juice (I like to squeeze mine from a fresh grapefruit, but you can use store-bought juice as well)
  • 1 fennel
  • 1 cup sugar
  • 1 cup water
  • 2 ounces gin
  • Champagne

Make the fennel simple syrup by chopping up the bulb of the fennel and adding it to the water and sugar in a small pot over medium heat. Let it come to a boil, and then simmer for 20 minutes. Take it off the heat and let it sit for another 20 minutes. Strain the fennel pieces out.

Add gin, grapefruit juice, and 1/2 ounce of simple syrup to a cocktail shaker with ice. Shake well.

Pour into champagne glass, and top with champagne.
