Easy Beef and Vegetable Skillet Recipe

I've always been a meat and potatoes kind of gal. Which is why this giant skilled chock full of sirloin tips, small potatoes, soft carrots, mushrooms and more is my idea of the ultimate comfort food.

And even though this dish is packed with some of my favorite foods, it's incredibly easy to make and throw together. I added a delicious simmer sauce to really marinate the meat and vegetables, and add a hearty punch of flavor to the entire meal.   • 1 package simmer sauce (I used Inagine Organic Culinary in Portobello Red Wine).
  • 1 tablespoon olive oil
  • 1 pound sirloin tips, cubed
  • 7-8 small yellow potatoes, halved
  • 2 cups baby carrots
  • 1 cup grape tomatoes
  • 1 cup baby portobello mushrooms
  • Fresh rosemary for garnish

Steam the carrots and potatoes until nearly fork tender. About 10 minutes. Set aside.

Heat oil in large skillet over medium/high heat.

Add steak tips and brown each side of the meat. Cook for about 3 minutes on each side. Meat should be nearly cooked through.

Add simmer sauce packet and vegetables to the skillet and stir to combine. Allow to simmer on low heat for about 5-7 minutes until hot and bubbly.

Serve hot on its own or with rice. Garnish with rosemary if desired.
