Homemade Banana Peanut Butter Ice Cream with Brownie Bits

If you want an easy dessert that will look great and be gobbled up, try this idea. It's essentially brownies with a banana peanut butter and hazelnut ice cream, but the ice cream is homemade and all of it is layered in a waffle cone.


Let's talk about the waffle cone for a second. Everyone loves a waffle cone, and if you think about it, it doesn't have to just be for ice cream. It is the perfect vessel to hold all sorts of dessert items and combinations. For an easier way to save a little bit of time, you could use pre-made chocolate chip or fudge brownies, such as Cheryl's brownies, and cut them into little pieces for your cone. 

If you wanted to go with a super healthy version, you could fill up a cone with different berries and top it with whip cream. Or you can go super decadent and layer chocolate mousse with pound cake and caramel sauce. In that way, the cone is just another container for your dessert... that you can eat!

 

 

Keep in mind that this recipe is a basic one, and you should feel free to improvise and elaborate on this as much as your heart desires. Add whipped cream or fresh pieces of bananas. Top it with your favorite chopped nuts or caramelized popcorn. Have fun with it!

This particular recipe incorporates a healthy and super quick ice cream. Just make sure you have some frozen bananas on hand.

 

Ingredients
  • Waffle cone
  • Chopped-up baked brownies (I used a box mix, but you could go the store-bought brownie route with Cheryl's brownies)
  • 1/2 cup Greek yogurt
  • 1/4 cup peanut butter
  • 1/2 cup hazelnut spread
  • 3 frozen bananas
  • Toppings: Walnuts, caramelized popcorn, whipped cream, etc.
Directions

 

Have three frozen bananas ready to go. Make brownies, according to box (or per your favorite recipe). In a blender, mix the frozen bananas with the yogurt, hazelnut, and peanut butter until smooth.

After the brownies are ready, cut up into small pieces. Place a few brownie bites on the bottom of the cone.

Top with layer of the banana ice cream, then another layer of brownie and finally with more ice cream.

Cover with desired toppings.
