Apple Cinnamon French Toast Casserole

Whether it’s apple picking season or not, crisp juicy apples seem to make their way into my desserts, entrees and baked goods all year long. But with the season fast approaching, it's the perfect time to whip up this casserole for your family to enjoy!

This French toast casserole is the perfect dish to serve for brunch, especially when the apples are warmed and the bread puffs up in all its glory while baking in the oven. Dust with a topping of powdered sugar and maple syrup to fully enjoy its sweet crispy flavor.

  • 5 cups bread cubes
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup white sugar, divided
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon margarine, softened
  • 2 teaspoons ground cinnamon
  • 2-3 apples cored, peeled and cubed
  • Powdered sugar
  • Maple syrup

Preheat oven to 350 degrees F.

Lightly butter an 8x8 inch baking pan and line bottom of pan with bread cubes.

In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. Pour egg mixture over bread.

Dot bread mixture with margarine and let stand for 10 minutes.

Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top.

Bake in oven about 20 minutes. Add apple cubes on top of bread, and put back in the oven for 30 more minutes until top is golden and apples are warm. Dust with powdered sugar and maple syrup.

Serves: 4-5
