Rainbow Bellinis: Set Up a Homemade Bellini Bar

Spring is in the air! Which means it's time for fresh flowers, warmer temps and bright colors. And when the weather gets nicer, I love having outdoor get-togethers with my best girlfriends.

In spring when it's warmer out, I love having brunch or cocktails outside, enjoying the sun on our deck. One way to really soak in the season is with a fresh fruit bellini! Traditional bellinis are made with peach puree and prosecco, but I thought it would be fun to set up a bellini bar with different colors and flavors of fresh fruit.



With all of the fresh fruit I chose, the purees look like a rainbow when served side-by-side. This Homemade Bellini Bar is beautiful, fun, delicious, and most importantly easy! The same prep is required for each fruit flavor you choose, so it’s easy to throw it all together. Serve with fresh fruit for garnish, and you'll really look like a party pro.

To add to the spring vibe, I served alongside beautiful tulips from 1-800 Flowers. Vibrant flowers and fresh fruit for spring, what could be better?



  • 1 (16 ounce) bag frozen sliced peaches
  • 1 (16 ounce) bag frozen whole strawberries
  • 1 (16 ounce) bag frozen pineapple slices
  • 1 (16 ounce) bag frozen blackberries*
  • 4 tablespoons agave nectar, divided
  • 5 cups water, divided
  • Prosecco or Sparkling Water (Sparkling Water is a great option if you want non-alcoholic drinks!)

*Note: These are just the fruit flavors I chose; feel free to use 16 ounces of any fruit you like


Place 1 bag fruit, 1 tablespoon agave nectar, and 1 ½ cups water in blender and pulse until well combined. Pour into a cup or container and set aside.

Repeat for the rest of the fruit types.

To make your bellinis, pour fruit of your choice into the bottom of a champagne glass, about 1/4 of the way up with fruit. Top with Prosecco or Sparkling Water. Garnish with fruit if desired.

Makes: 1 bag of fruit makes about 4 bellinis
