Cheesy Stuffed Jalapenos

Jalapeno poppers are one of those quintessential restaurant foods that satisfy everyone's craving for something spicy, cheesy and overall delicious. But now you can have the delicious taste of the classic bar food right in your own kitchen.

These Cheesy Stuffed Jalapenos pack a punch!  Not only do they pack a punch of heat, but the flavors explode in your mouth with each bite. The jalapenos make this snack extra spicy, but the cheesy center balanced out the spiciness. Then with the crumbled bacon on top, the flavors are really brought together to an amazing level.

The snack is perfect just to enjoy with your family, or to serve for a Super Bowl or other sports watch party. Wash them down with one of these New York Craft Beers for the ultimate bar experience.

  • 6 jalapenos
  • 3 cups cheddar cheese, shredded
  • 4 ounces softened cream cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Olive oil spray
  • About 2 pieces of cooked bacon, crumbled

Preheat the oven to 350 degrees F. Line a baking sheet with foil and set aside.

While wearing gloves, cut each jalapeno in half and carefully remove the seeds from inside each jalapeno. Set each half on the prepared baking sheet.

In a medium bowl, stir together the cheddar cheese, cream cheese, salt, and pepper. Using a tablespoon, scoop 1 tablespoon of the cheese mixture and stuff it inside each jalapeno half. If you have leftover filling, add more of it to each jalapeno until you run out. The measurements don’t need to be exact. Spray the jalapenos with olive oil spray and place them in the oven to bake. Bake until the tops are a nice golden brown, about 7-10 minutes.

Remove the stuffed jalapenos from the oven and sprinkle them with the cooked, crumbled bacon. (For the bacon, all I do is bake it in the oven for about 10 minutes, until it’s nice and crispy. Allow it to cool, and then, using your hands, crumble the bacon into small pieces.)

Place the jalapenos on a platter and serve immediately. They are best served hot.

These last up to 3 days in a sealed container in the refrigerator. To re-heat, just place in the oven again until they are warmed throughout.
