Whewww! Made It Through the Holiday Parties!

Last night marked the official end of my holiday partying! Yes, "partying", as a verb, because I am worn out...in the best way! Seems like this season was packed with parties, starting at the beginning of December when we shot the Big Game Party videos in NYC, and then last night's event was an "Epiphany Party." Actually, my friends who hosted the event were just looking for a party title and, lo and behold, "Epiphany" marked the calendar. They served a delicious shrimp appetizer, and I did my best to recreate the recipe below.

You see, the day after Christmas, we hosted a "Boxing Day Party," with no thematic affiliation or decor tied to the holiday - just a fun reason to get together. So the trend started, along with a new wave of parties, and New Year's Eve and New Year's Day events mixed in.

However, next week is my birthday!!!! It all begins again. My husband is throwing a birthday party for me - he found a cool new online invitation site called MyPunchbowl and made an invitation with this picture of me holding Champagne. From one party to the next!

Prosciutto Wrapped Shrimp with a Current-Wine Glaze

1/4 cup currant jelly

1/4 cup red wine

20 raw shrimp, tail-on (shelled & deveined)

20 strips prosciutto

salt & pepper

2 tablespoons fresh thyme leaves

Preheat oven to 350 degrees. Microwave currant jelly and wine in a small bowl until melted; stir to combine. Wrap prosciutto around shrimp. Dip in currant-wine mixture. Place on a lightly oiled baking sheet. Season shrimp with salt and pepper. Sprinkle thyme over shrimp. Cook for 8 - 10 minutes or until shrimp is thoroughly cooked. Serve immediately.
