Spring Awakenings with an Easy Brunch in Stations
Spring brings many reasons to celebratel bridal showers, Mother’s Day, Graduation, Bat/Bar Mitzvahs, Father’s Day, Cinco de Mayo among them. Make the most of the season by bringing together family and friends for a delicious and easy Spring Brunch made up of individual bars and stations so everyone gets what they want.
SPRING MENU
Eggs
When considering the menu, make eggs the main attraction with an omelet station, or a deviled egg bar.
Omelet Station:
Set up an omelet station if you have someone to prepare them.
Offer mix-ins:
• cheese (cheddar, mozarella, brie, goats cheese)
• vegetables (onions, peppers, mushrooms, spinach, tomoatoes)
• crumbled bacon
• ham
• sausage
If cooking on the spot isn’t ideal, prepare ahead of time a few different frittatas or quiche pies.
Or, to make things even easier, serve the eggs room temperature by creating a deviled egg bar with variations on the classic.
Deviled Egg Bar:
• Deviled eggs with salmon and onion
• Crab stuffed deviled eggs
• Sour cream and chive deviled eggs
• Bacon Deviled Eggs
Potato Pancake (Latke) Bar
Perfect for Spring is the Potato Pancake Bar. This favorite, also known as latkas, is often seen on holiday menus this time of year.
Make your pancakes a little on the larger side, say 4-5 inches in diameter.
Once they are cooked, keep them delectable:
- Keep them warm on the buffet by presenting them on a slab of raised marble and placing 2 cans of sterno underneath. The sterno allows the marble to act as a hot plate which will keep your pancakes at the perfect temperature through out the party
- Surround the pancakes with delicious toppings and condiments beyond just apple sauce and sour cream.

Potato Pancake Toppings:
• Smoked Salmon Tar Tar seasoned with Capers, minced Onions, and Dijon
• Whipped Boursin Cheese with Crispy Pancetta
• Caramelized Onions and Julienne Fennel seasoned with Sherry Vinegar, Honey ,and Thyme
• Sauteed Morell Mushrooms and Asparagus finished with Herb Butter
• Grilled Apples seasoned with Salt, Pepper, and Sage
• Crumbled Gorgonzola, Honey Roasted Almonds, and Red Seedless Grapes
• Mango, Pineapple and Red Pepper Salsa
• Crème Fraîche with diced Chives
• A large bowl of Caviar
Salads
Salads are easy to prepare and a great side dish.
Offer your guests a variety of selections:
- Mixed green or Caesar salad.
- Accompany salads with platters of smoked salmon, grilled chicken or shrimp.
- A Cobb salad or Waldorf chicken salad are always a welcome delight as well.
- A Non-traditional fruit salad: Mounds of berries presented with vanilla yogurt or crème fraîche on the side

Baked Goods
Be sure to visit your local bakery just before the brunch in order to get the freshest, straight-out-of-the-oven staples.
You’ll want:
- bagels
- muffins
- croissants
- small rolls
Set up bowls of cream cheese, jellies and whipped butter alongside these.
Beverages and Signature Cocktails
In addition to standard brunch beverages --- lemonade, iced tea and coffee, serve up pitchers of fresh fruit juices like Watermelon, Mango, or Pomegranate Juice.
A signature spiked cocktail is also a must.
Kier Royal: Try serving guests Kier Royal instead of the typical mimosas. This pretty pale pink drink should be served up in a champagne glass and garnished with a raspberry.

Bloody Marys are a must, so do have a freshly made pitcher on hand.
Belinis, made with peach nectar and champagne are also nice.
Mimosas, made of orange juice and champagne are a classic.
Mojitos are bold. Try one made of mint, sugar, lime juice, rum and club soda.

TABLE
Finally, make sure your tables are covered with tablecloths of bright colors. Top them off with vases full of fresh spring flowers.
Try a mono-botanical theme for a sophisticated and professional touch. This means that all of the flowers are the same, but they are in several different types and sizes of containers. You’ll create a lovely visual landscape that just screams “Spring!”
